Black Bean Burrito Recipe

Ingredients :

  • Half an onion

  • About 4-5 tomatoes.

  • 2 cans of black beans

  • Jerk spice

  • Pav Bhaji Masala (Can be found cheap at any India grocery store)

  • Soft wheat tortillas.

Method :

  • Drain the water out of the bean cans and toss them into a flat base pot at low heat. Slowly stir it from time to time while mushing it a bit to the consistency you want.

  • Take a big flat pan and add little olive oil to it. Wait until hot and then toss in the chopped onions. Add salt and let them brown.

  • Cut tomatoes in quarters and add to the onions. Cook on medium heat for awhile until it softens. Mash the tomatoes and onions with a spatula and then add some amount of jerk spice and pav bhaji masala. Don’t add too much of the spice. You can add them latter according to taste.

  • Now empty the beans into the big flat pan and mix and mush the whole thing to a consistency you want. Add some lime juice.

  • Let it simmer till most of the water evaporates. Add some chopped coriander in the end. Taste and add salt or spices as you wish.

This is this bean mix can be eaten with rice or in burritos. To make a burrito heat up a pan on high heat without any oil. Once hot lower the heat to medium and put the tortilla on it. Keep rotating the tortilla so it doesn’t stick to the pan. Should see a light browning on the tortilla. This will make the burrito a little crisp to eat. Turn over the tortilla and do the same thing. Add the bean mix, some chili paste and guacamole to the tortilla roll it and close the ends and enjoy!

Pro Tip: You can substitute beans with potatoes as well.
