Reciepe Of the Week

It only feels right to begin our first weekly newsletter by dedicating it to the dish that's made the most difference and stirred up some controversy along with deliciousness in our little group. Actually we would have started with the smoothies, but it's me and I'm partial to soup.

So, what do you need? Just pumpkins. It has several advantages one being widely available, cheap, and full of important nutrients. You can have some additional garnishes to pimp up the soup.

Pumpkin Soup

Creamy. Subtle. Delicious.

Pumpkin Soup

It only feels right to begin our first weekly newsletter by dedicating it to the dish that's made the most difference and stirred up some controversy along with deliciousness in our little group. Actually we would have started with the smoothies, but it's me and I'm partial to soup.

So, what do you need? Just pumpkins. It has several advantages one being widely available, cheap, and full of important nutrients. You can have some additional garnishes to pimp up the soup.

Ingredients

  • Pumpkin 1kg
  • Salt
  • Parsley
  • Sesame Seeds

Reciepe

  • Cut pumpkins in to chunks (take of the peel to get a better yellow hue)
  • Put in boiling water until soft about 10 mins, don't forget to salt the water (don't use too much water, just cover upto half submerged, we want a creamy soup.)
  • Blend it all
  • Garnish with roasted sesame seeds and parsley.
  • Enjoy!

Pro Tip: Roast chunks of pumpkin in a pan first to get more flavour into the soup.
